SFINCI...or as we say in Sicily, SPINCI

Sfinci are a kind of doughnuts made of flour, potatoes, milk, marsala and anice seeds. After cooking they are dipped in a mixture of sugar and cinnamon.

During the holidays they  can be found everywhere ..... in cafès, pastry shops, delis etc. but nothing beats the taste of homemade Sfinci.

Here is how I made them:

Mix 300 grams of strong flour with 100g cold mashed potatoes, add 8 g of fresh yeast dissolved in 250 ml warm milk, then add 1 tablespoon Marsala wine and 1 tablespoon anice seeds. You should have a relatively soft dough.  

Let it rise in a warm place for about 1 hour. Heat olive oil, when it's quite hot dip your hands in cold water then take a bit of the dough, make a hole in it with your fingers and drop in the hot oil. Cook for about 1 minute on each side, until golden, then place on wax paper to drain off the oil.  Dip in the sugar and cinnamon mixture and .... BUON APPETITO! I warn you it's impossible to stop eating them:)
