Sicily, Summer, Scirocco

The days are becoming hotter and hotter, but the Scirocco is blowing harder and harder. When it comes it stays for at least 4 or 5 days, and drives everyone crazy because of the stuffiness and dust. I don't like the wind on my head so I never go out without a hat.

NEVER SEEN BEFORE! MY CREATION: DORAYAKI WITH CANNOLI FILLING



If you like Japanese cartoons you will know that  dorayaki are Doraemon's favorite food. The classic dorayaki are filled with AN  (azuki paste). 

Being Sicilian, I  decided to replace the azuki paste with CANNOLI FILLING. 



First, make the dorayaki. You can find the recipe in my earlier post here



Mix the sugar and eggs, then add the flour, blend well then add the baking powder, honey, melted butter and water.




 Grease the pan and drop ladle-fuls of the mixture.



FILLING:

Ricotta, sugar, candied fruit and chocolate chips. Mix the ricotta with the sugar, add the fruits, chocolate chips and stir well. Place the filling between two dorayaki. 





There you have it...a mix of Japan and Sicily!  Who said East is East, and West is West and never the twain shall meet?  Well, maybe it was so in Kipling's time but certainly not anymore!
